Vegetarian Detox Soup

Today I am sharing an easy to make vegetarian detox soup. We all know the feeling after the holidays are over; our bodies are feeling the results of indulgence. It may have been worth it when the holidays were here but it’s a burden when they are over.
A little detoxification is all we need! This soup is perfect to give your body those good nutrients and clean out the bad stuff. It is packed full of detoxifying ingredients including two of my favorites: turmeric, which is an anti-inflammatory and helps detox the liver and ginger, which kicks up your metabolism and is one of the strongest detoxing food out there.

What you’ll need:
- 1 tablespoon coconut or olive oil
- ½ large onion, chopped
- 2 garlic cloves, finely chopped
- 2 cups chopped broccoli florets
- 1 ½ cups sliced carrots
- 1 cup sliced celery
- 4 cups vegetable broth or water
- 2 cups ginger tea
- 1 teaspoon Turmeric
- 1/ teaspoon Italian Seasoning
- 2 cups kale, de-stemmed and torn into pieces
- Salt & pepper
Instructions:
Steep two ginger tea bags in two cups of hot water; set aside.
In a large pot or dutch oven, heat oil over medium-high heat.
Add onion and garlic; sauté for 2-3 minutes until onions are soft.
Add broccoli, carrots, and celery; stir and cook for 2 minutes until slightly soft.
Add vegetable stock, ginger tea, and turmeric; stir until combined.
Bring to a boil. Reduce heat to simmer for 10-15 minutes, stirring occasionally until vegetables are soft.
Stir in the Italian seasoning and salt and pepper to taste.
Add kale, stir and allow to cook for one minute.
Serve hot and enjoy!
